Made with unreasonable care.

Bò is food for people who take eating well seriously. We make beef marrow bone broth in Portugal, simmered for 24 hours and delivered fresh. A deeply savoury cup, ready whenever you are.

Bò beef marrow bone broth in a glass jar

Three ingredients. A whole day in the making.

Portuguese beef marrow bones, water and hand-harvested Algarve sea salt.

Roasted Portuguese beef marrow bones give Bò its rich, savoury flavour. A slow simmer draws out the gelatin that makes it set softly in the fridge. Warm it in a cup, add it to a soup, or turn the juices in your pan into a sauce. We have already done the long part.

Eating well, for the long run.

Bò grew out of an interest in good food, health and longevity. Our starting point is a traditional food made well: a broth whose natural flavour and texture belong together, easy to bring into a modern routine.

Nutrition

Good broth takes its time.

We roast Portuguese beef marrow bones, simmer for 24 hours with water and hand-harvested Algarve sea salt, skim carefully, triple-filter, then fill and chill promptly.

  1. Roast for depth

We roast the Portuguese beef marrow bones before simmering to give the broth a richer, deeper savoury flavour.

  2. A full 24-hour simmer

We simmer for a full 24 hours, without a pressure cooker or vinegar. The broth develops its flavour slowly, with Portuguese beef marrow bones and water in a 1:1 bones-to-water starting ratio.

  3. Skim and triple-filter

We skim throughout cooking and filter the broth three times. That extra work gives it a smooth texture and a clean, rounded flavour.

  4. Fill, chill, deliver

After filtering, we portion the broth and chill it promptly. We prepare fresh batches each week and arrange personal in-hand delivery along our Portugal route.

Kodawari

For Bò, kodawari means paying attention to how we make the broth: choosing the ingredients, simmering for a full day and filtering it three times.
